Use jestem z plus the country in the genitive case, which usually means an -i or -y ending: z Polski, z Anglii, z Hiszpanii. To say which language you speak, use mówić po plus an adverb form: po polsku, po angielsku.

The mistake to avoid
It is po polsku, not "po polski" - the language form ends in -u.
